This time last year, my family was enjoying 70-degree weather in the Happiest Place on Earth across the table from the Wahlbergs, another Missoula family.

We hadn’t planned the trip with friends, but once we discovered we’d be there at the same time, we had to make a dinner reservation together so we could enjoy good food and comparing notes from our trip. That’s the magic of Disney: It’s like a magnet for all the best things — and people.

This year neither the Wahlbergs or the Williamses are in Disneyland. In fact, no one is. The California theme park has been shut down since the start of the spread of Covid-19 in the United States and no one knows when it will reopen. Disney World in Orlando re-opened in the summer.

We’re coping the best way we know how: By looking at pictures from our last trip and dreaming of our next visit. But while our Photos app gets a workout, Courtney Wahlberg prefers to cope in the kitchen by making her favorite Disney-themed food. I had to share her culinary adventures with you.
